THE JOB:
As the EDR Executive Chef at Park MGM, you will oversee all facets of commissary and EDR operations, providing strategic direction and leadership to the culinary team. In this role you will drive operational and financial performance, ensuring effective recipe management, inventory and supply control, and cost optimization. The EDR Executive Chef is also responsible for team development through performance monitoring, scheduling, and staff training. Additionally, they ensure the commissary operates in full compliance with MGM Resort’s service standards, delivering exceptional guest experiences and maintaining high levels of customer satisfaction.
THE DAY-TO-DAY:
Owns, leads and oversees daily commissary and EDR operations, fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and execution and development of menu strategies to produce both short-term and long-term profitability.
Responsible for execution of policies, operating procedures, pricing initiatives, training programs, directives, menus, rules and regulations for the commissary staff.
Manages Human Resource responsibilities to include creating a work environment that promotes teamwork, performance feedback, recognition, mutual respect, and employee satisfaction.
Maintain the highest standards of health, sanitation and cleanliness with in all areas of the kitchens.
Interacts with guests to ensure satisfaction and product quality. Reviews BEOs, SEOs and MEOs daily to ensure that orders are executed upon. Reacts to any feedback on guest complaints and takes any appropriate action.
Collaborates with divisional Directors, Executive Chefs, and kitchen team to ensure a seamless execution of product delivery between kitchens inclusive of time standards, recipe specifications, and quality.
THE IDEAL CANDIDATE:
Bachelor's degree or equivalent experience
At least two (2) years of prior relevant experience
