THE JOB:

The Mansion Captain in MGM Grand is responsible for delivering an exceptional and seamless dining experience by providing gracious, attentive, and timely service to all guests. This role oversees and orchestrates the flow of restaurant operations while upholding the refined standards and distinctive ambiance of the Mansion Dining Room. The Mansion Captain serves as a key ambassador of the brand, expertly guiding guests through each phase of their experience and ensuring that every interaction reflects the highest level of elegance, hospitality, and attention to detail.

THE STARTING RATE: $20.8923 Hourly

THE DAY-TO-DAY:

  • Meet with Chef and Stewarding to review scheduled group's menu and equipment requirements

  • Ensure agreement of delivery times, amounts and special arrangements

  • Train and direct Banquet wait staff; prepare and adjust weekly work schedules in accordance with staffing guidelines and labor forecasts

  • conducts full and complete food/wine/ beverage service in a fine manner

  • actively takes orders and marks them to ensure correct order is served to each guest

  • monitor guests full dining experience and control all aspects of service to flow. Assumes ultimate responsibility of guests' satisfaction while dining

  • handle several tables at the same time

  • maintain cleanliness of work area. Keep tables neat and orderly by removing dishware no longer in use and assist with bussing tables and resetting for the next seating

  • Anticipate guest needs, respond promptly and acknowledge all guests, and maintain positive guest relations

  • Knowledgeable of service requirements for menu selection, major ingredients, appearance, texture, quality standard, garnish and method of presentation

  • Check storage areas for proper supplies, organization and cleanliness; instruct designated personnel to rectify any cleanliness/organization deficiencies

  • Inspect the scheduled function areas/rooms for cleanliness, working condition and proper furniture/equipment set up, rectify any deficiencies with respective departments

THE IDEAL CANDIDATE:

  • High School Diploma, GED or equivalent is required

  • 2+ Years of Prior Relevant Experience in a Captain position in a fine dining restaurant is required

  • Able to work varied shifts, to include weekends and holidays

  • excellent customer service skills

  • Basic knowledge of wines from around the world, spirits, cocktails, and coffee beverages preferred

  • able to multitask and work with a since of urgency

  • 2nd language skills preferred: Chinese dialect- Cantonese& Mandarin, Korean, Japanese. European and or Middle Eastern Language helpful

  • Ability to perform job functions with attention to detail, speed and accuracy

  • Able to follow directions effectively, effective listening skills, strong judgment skills and excellent organizational skills to function effectively under time constraints and within established deadlines

  • Maintain confidentiality of guest information and pertinent hotel data

  • Excellent customer service skills as well as interpersonal skills to deal effectively with all business contacts

  • Knowledge with computers and basic mathematical calculation
