THE JOB:

Step into a high-impact culinary leadership role as the Convention-Banquet Sous Chef, where precision, teamwork, and exceptional execution come together to deliver unforgettable guest experiences.

In this dynamic role, you will help lead banquet culinary operations by ensuring outstanding food quality, flawless presentation, and seamless execution for large-scale events and special occasions. By inspiring your team, maintaining the highest culinary standards, and bringing the MGM Resorts spirit of hospitality to life, you will help create WOW moments guests will remember long after the event ends.

THE DAY-TO-DAY:

  • Maintain quality and proper presentation of food

  • Drive the customer relation management system by ensuring that all such orders are handled correctly

  • Communicate with chefs, management, employees and guest efficiently with proper reporting, and meetings

  • Schedule and maintain the budgeted labor costs as well as potential food cost

  • Understand and utilize Stratton Warren system properly for purchasing, release orders and cost transfers

THE IDEAL CANDIDATE:

  • 2+ years of culinary experience in a high-volume environment required, with 5+ years preferred in high-volume hospitality, hotel/casino, banquet, or resort culinary operations

  • Strong preference for candidates with a banquet background, ideally with experience supporting large-scale events, high-volume production, and elevated food execution

  • Familiarity with Oracle is a strong plus for operational and inventory management

  • Flexible and dependable, with the ability to work early mornings, late nights, weekends, holidays, and high-demand event schedules

  • Union / CBA experience strongly preferred

  • High School Diploma or GED required
