THE JOB:
Are you ready to take your culinary leadership to the next level with a world-class brand? As the Executive Sous Chef for TAP, you’ll play a pivotal role in shaping an exceptional kitchen experience—partnering closely with the Executive Chef to inspire, guide, and elevate a high-performing culinary team. In this dynamic leadership position, you’ll help drive both operational excellence and financial success, while ensuring every dish reflects the quality and innovation of the MGM brand. From mentoring kitchen staff to optimizing recipes, inventory, and scheduling, you’ll be at the heart of delivering a top-tier dining experience.
THE DAY-TO-DAY:
Lead and oversee daily restaurant kitchen operations, fiscal budgets, labor productivity, scheduling, inventory control, and guest service standards
Execute and develop a menu strategy to produce short-term profitability. Execute on the restaurant’s business plan and assist Executive Chef with developing and executing tactics to achieve goals and targets.
Maintain the highest standards of health, sanitation and cleanliness with in all areas of kitchen.
Assist the Executive Restaurant Chef with managing Human Resources responsibilities for the kitchen team to include: creating a work environment that promotes teamwork, performance feedback (coaching and counseling), recognition, mutual respect and employee satisfaction.
Interacts with guests to ensure satisfaction and enjoyment of dining experience.
Work alongside the service team to ensure a seamless service experience between kitchen and dining room.
Maintains excellent knowledge of venue’s food & beverage products, menu items and equipment used to perform duties.
THE IDEAL CANDIDATE:
Bachelor's degree or equivalent experience
Two years of prior relevant experience preferred
Previous experience managing team members under a collective bargaining agreement preferred
