THE JOB:

The Executive Steward at The Cosmopolitan of Las Vegas is responsible for leading and overseeing all Stewarding Department operations across the property. This role ensures the highest standards of cleanliness, sanitation, efficiency, and team performance while supporting food and beverage operations. All duties are performed in accordance with departmental and MGM Resorts policies, practices, procedures, and service standards.

THE DAY-TO-DAY:

  • Oversee daily operations in the stewarding department to ensure departmental strategic goals and objectives are met and expectations are exceeded

  • Achieve all service, financial, and human resources goals established by management

  • Manage Human Resources responsibilities, including fostering teamwork, performance feedback, recognition, mutual respect, employee satisfaction, hiring, training, succession planning, policy compliance, and legal requirements

  • Assist in reviewing the monthly department P&L and budget, identifying areas for improvement, and implementing action plans to enhance results

  • Maintain staffing levels within approved department allocations

  • Conduct walk-through inspections of kitchen areas and oversee training procedures for department personnel

  • Assist in coordinating and communicating with outside vendors, the Health Department, and other regulatory agencies

  • Assist in coordinating purchasing needs and parts required to support Food & Beverage outlet operations and requisitions

  • Communicate effectively with other hotel departments as needed

  • Maintain personnel records, including schedules, attendance, vacations, counseling notices, performance reports, and disciplinary documentation

  • Communicate policies, standards, and health code requirements to department employees and ensure compliance

  • Adhere to all company programs and initiatives

THE IDEAL CANDIDATE:

  • Bachelor's Degree or equivalent experience

  • 2+ Years of prior relevant experience

  • ​Experience overseeing multiple stewarding teams, large banquet operations, and numerous food & beverage outlets simultaneously
